Pyramid Cheesecake

This fun and yummy cheesecake will steal everyone’s hearts!

Cheesecake

Ingredients

  • ½ cup softened butter
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tub of cream cheese
  • 1 packet of tennis biscuits

 Method

  1. Cream butter and sugar until combine and pale.
  2. Add the egg and vanilla essence- beat.
  3. Add in the cream cheese and beat until smooth and creamy.
  4. On a piece of foil, lay down 3 rows of 7 tennis biscuits.
  5. Add the cheesecake mix to the middle roll and position the 2 outer biscuits over the mixture to resemble a pyramid.
  6. Continue with all biscuits in the way
  7. Press gently to ensure all firmly positioned
  8. Hold the sides of our foil, and fold foil over. Place in the fridge to set for a minimum of 4 hours.
  9. Remove from fridge and decorate as desired.

Frosting

Ingredients

  • 1 tub of cream cheese
  • 250 ml fresh cream
  • 2 table spoons icing sugar

Method

  1. Beat cream cheese until soft and creamy, mix in icing sugar. Add fresh cream and whip until thick but no too much that it becomes butter 🙂
  2. Spread frosting or pipe onto pyramid cheesecake.
  3. I drizzled melted chocolate and topped peaks with raspberries.
