Pyramid Cheesecake

This fun and yummy cheesecake will steal everyone’s hearts!
Cheesecake
Ingredients
- ½ cup softened butter
- 1/3 cup sugar
- 1 egg
- 1 tsp vanilla essence
- 1 tub of cream cheese
- 1 packet of tennis biscuits
Method
- Cream butter and sugar until combine and pale.
- Add the egg and vanilla essence- beat.
- Add in the cream cheese and beat until smooth and creamy.
- On a piece of foil, lay down 3 rows of 7 tennis biscuits.
- Add the cheesecake mix to the middle roll and position the 2 outer biscuits over the mixture to resemble a pyramid.
- Continue with all biscuits in the way
- Press gently to ensure all firmly positioned
- Hold the sides of our foil, and fold foil over. Place in the fridge to set for a minimum of 4 hours.
- Remove from fridge and decorate as desired.
Frosting
Ingredients
- 1 tub of cream cheese
- 250 ml fresh cream
- 2 table spoons icing sugar
Method
- Beat cream cheese until soft and creamy, mix in icing sugar. Add fresh cream and whip until thick but no too much that it becomes butter 🙂
- Spread frosting or pipe onto pyramid cheesecake.
- I drizzled melted chocolate and topped peaks with raspberries.
